Gav’s Salsa, Tomato Salsa and a Guacamole

These salsas will change your life, i’m not kidding. They will liven up boring salads - although why you are spending your time eating boring salads I don’t know.

Stop that now. Add some herbs, add a mixture of leaves, add texture - crunch, chew, and mix up your dressings. Oh gosh, I need to do a post about salads, don’t I, because this post is supposed to be all about these salsas, and yes, I know a guacamole isn’t a salsa, and you know what? I actually should change the title, hold on.

Okaaaaay… so these SALSAS. The Mango Salsa was introduced to me at my husband’s friends BBQ - Gav Hill. So I call this Gav’s Salsa. You should too. Gav is pretty ace at cooking and really should have his own TV show.

The Mango salsa has the tropical sweetness and spicy heat of chilli, and is perfect in just about anything. Add it to tacos, on the side of chilli and especially into salads. I have no idea why it took me so long to find it. Mexican food is literally my favourite food, and well I feel for those years where I don’t know about this salsa.

The tomato salsa is a general recipe for salsa that everyone has, but it’s something that gets forgotten about, as we can easily pick up a ready made salsa from the store. This salsa is almost too easy to make, and if you’re chopping up mango and tomatoes anyway, you may as well ass this into the mix.

Gav’s Salsa - Mango Salsa

You will need:

2 Mangos - diced

1 Red onion - diced

1 Red Chilli - deseeded and diced

2 limes - juiced

Handful coriander leaves - chopped

Red pepper - chopped

How to make:

Put everything into a bowl and mix throughly, then add in the lime juice, check the seasoning and serve. Try not to eat too much before you serve, but don’t make any promises.

Roasted Garlic Tomato Salsa

You will need:

6 - 8 tomatoes- chopped

1 lemon

2 tbsp Olive oil

1 red onion - chopped

generous bunch of coriander- chopped

bunch of flat leaf parsley- chopped

1 red chilli - deseeded and chopped

2 cloves garlic - roasted for 10 minutes and chopped.

How to make:

Put every thing into a bowl and mix, ( are you sensing a general theme with salsa??) add a splash of olive oil and lemon juice, season and serve.

Guacamole

I was going to write out the recipe for guacamole but realised I’ve done it before and why waste time tapping at the keyboard when I could be chopping in the kitchen? Am I right?! So here’s the link for a guacamole recipe, and remember, no more boring salads!
